We are as keen on questions as we are on delicious food. Which is why we tried to answer the most frequently asked questions about AMIDORI and M¡dori®. But if your curiosity has only just been piqued, do get in touch.

They don’t stand a chance.

Ingredients & Nutrients Are you focusing on peas even though potatoes, lupins and sunflowers also provide proteins?

Yes, peas will be our main ingredient particularly during the first 2-3 years. But we are already looking at adding other plants rich in proteins which can be planted locally.

Products Are your products “easy as pie” to prepare, but also exciting enough for professionals to have a go?

Yes. Our M¡dori® is already used by professional chefs!

Products Do you only offer hot dishes (lunch and dinner)?

No. Our products comprise hot, warm and cold dishes. Our focus is on savoury dishes, but our product range also includes a few sweet creations. From breakfast through to your midnight snack.  

Ingredients & Nutrients Does Midori contain purine?

The relevant content of uric acid in our Midori products is <1 mg / 100g 

Company How are you planning to meet your sustainability claim?

In our view, there are no raw material waste products, only side products (side-streams). These are largely processed further by our partner “Emsland Group”. As with all raw materials, we try to ensure that all components of peas are used purposefully.

Products Is M¡dori a meat substitute?

M¡dori is neither meat nor fish – and definitely not tofu. And yet you could never claim that we do things by halves! It’s definitely a great alternative.

Products Is M¡dori suitable for children?

Yes, of course – also for teens, ‘best agers’ and anyone older, too.

Ingredients & Nutrients Is M¡dori® vegan?

At the moment all M¡dori® products are vegan, but we will most likely add some vegetarian products to our range as well.

Ingredients & Nutrients What about gluten and lactose?

For healthy people, gluten and lactose are not generally a negative component of their diet. It only makes sense to eliminate them from your daily diet if you suffer from serious intolerances. If healthy people cut out gluten and lactose, this can in fact cause problems (especially for children!) because our digestive system might reduce production of the enzymes required to process these components. More than 98% of the population have no problem at all with digesting gluten and lactose. Other reasons are often wrongly given to explain these severe intolerances, such as too high a consumption of water-insoluble fibres, spices, garlic, onions, etc.

Company What does regionality mean to you?

We differentiate between ingredients which are plant-based sources of protein, and auxiliary ingredients or spices. All plants which we use for proteins are grown regionally/within Europe. Spices and auxiliary ingredients might come from anywhere in the world - but we also try to find organic products and fairtrade-certified sources as much as possible. We never use soya or palm oil.

Ingredients & Nutrients What makes proteins so valuable?

They contain all essential amino and fatty acids, can be produced in resource-friendly processes and are incredibly tasty.

Ingredients & Nutrients What nutrients does M¡dori contain?

To give you an analysis: M¡dori = protein (25-35%) + starches (2-5%) + fibre (5%) + salt (1-1.5%) + sugar (2-4%) + fat (2-4%) + water + vitamins + minerals

We offer different dishes with varied ingredients. In addition to proteins, this also includes vegetables and fruit purée.

Production What process is used to manufacture M¡dori®?

The process is called: High Moisture Extrusion. This describes a physical process in which the raw materials are blended, mixed and finally shaped using heat and pressure. In food production, extrusion processes are largely known from their use in the manufacture of cereals, crunchy peanut snacks and croutons, etc.

General What’s behind the two names amidori and M¡dori?

In Japanese, ‘Midori’ is the synonym for sustainability and ecology, and also the colour green. The company name amidori is a formation of the words: Ami (from amino acid = building block of life), and Dori (from the Japanese = take, use, utilise).

Ingredients & Nutrients Where do you get your ingredients from, and why is M¡dori not organic yet?

We are working on projects relating to different German federal states and to other countries within Europe. Our main focus is on Northern Germany, Scandinavia, Belgium, Britain and France. Eastern European countries are also very important here, particularly because it is our medium-term target to product organic quality ingredients. For this, we need more than just the organic arable land in Germany.

Ingredients & Nutrients Why AMIDORI uses zero soya?

Because we think that nature is already offering us the best ingredients just outside our front door. Also there are many people with soybean allergies or intolerance.

Ingredients & Nutrients Why are amino acids so important?

Because our entire digestive processes are based on them. This means that they can help us to live healthily in the long term.

Company You promise “maximum transparency from field to fork” - what do you mean by that?

We mean transparency where this makes sense. We don’t share everything with everyone. In our field, there are many competitors who are only just waiting to steal information and know-how.
